Rosemary Duck with Apricots

Rosemary Duck with Apricots This recipe comes by way of my Tennessee friend Keith Gray, who when I asked him, “does this recipe work with ducks you shoot, or that you buy in a grocery store?,” replied with a puzzled look,

“I’ve never bought duck in a store, but I guess it would work.”

Ingredients

  • 3 Tbsp chopped fresh rosemary
  • 2 Tbsp brown sugar
  • 1 Tbsp freshly ground black pepper
  • 2 teaspoons salt
  • 2 whole duck breasts, halved
  • 1/2 cup granulated sugar
  • 1/2 cup champagne vinegar or white wine vinegar
